Bottom line is this. Congratulations on your successful wedding! Don't get too upset about spending money on food that people didn't eat. Assuming you hired someone to cook for your event, I am surprised they let you take the food home. I wouldn't have let you do that. :} You paid to feed your guests at your event. You didn't pay for the food itself. Whoever cooked the food paid for it, and they obviously prepared too much food, so they are taking the hit. If you feel bad about having leftovers, just have a party or throw it out. Otherwise you will never eat a Taco again in your life because you will be so sick of them.
Assuming you had someone cater the event, you got a bonus. Assuming you did the work yourself, well then, you cooked too much. So what!?
Money is spent. That's it.
If you didn't want to spend the money, you should have eloped and gone to the Justice of the Peace and been done with it.
Let me ask you this: IF you would have run out of tacos for your guests, would you be complaining about the money?
I wouldn't donate it because of the potentially hazardous nature of the food. If it is or has been mishandled, you could cause someone to get sick.
In fact, it's already 4 days old. You need to freeze it or get rid of it NOW.

1. Freeze it for another time.
2. Parse it out to family members.
3. Throw a party
4. Donate it by taking a local church that feeds homeless people. Possible tax write-off?
You're going to spend more money trying to cook it all up.

1)You can make "taco lasana"
layer taco meat, with cheese and pasta, top with salsa and cheese and bake until bubbly.
2)Also you can make empanadas!, they already sell the empanada dough frozen in the supermarket. Just fill 'em and bake at 425 degrees or you can also deep fry.
Good luck to you, congrats on the wedding!!... I'm guessing in a week you will hate tacos!

maybe you can use some of the meet to make a broth.........
maybe you can donate some of the meet?? to a shelter cause i doubt you can eat 20 pounds of taco meat before it goes bad.............
or if its the shredded kind of meat add bbq sauce and make bbq sandwiches
make a pizza
make a lasagna
make some chilli
make meat pie's ( like a chicken pot pie but with the meat you have)

Donate to the local shelter or food bank, soup kitchen. Any place like that will be more than willing to take it to feed the homeless and less fortunate.

if the meat is by itself it can be frozen. the salsa cn be used on anything at all meals. the shredded cheese can be used on any thing from baked potatoes to grilled cheese sandwiches to mac & cheese to omletes or burgers or hotdogs. the lettuce can be used for regular salad or on sandwiches or burgers too. the diced tomatoes can be used on all theese things hope this helps
