When I cut brownies in the pan, the brownie will stick to the knife as I cut and does not leave a clean edge to the brownie. I want a nice smooth cut, like cutting a cake. Do I need a certain type of knife or to wet the knife first? Any suggestions?

If you can stand the wait, put them in the refrigerator to cool off. Never cut them while they're still hot or warm. Then use a sharp knife, like a paring knife or steak knife. Wipe off the knife after each pass through the brownies. Yummy! I think I'll go bake some. Have you tried the Barefoot Contessa's outrageous brownies? They are heaven on earth.

The cleanest way to cut cake or brownies is to turn them out of the pan onto a serving tray then slice through them with a length of plain, unflavored dental floss. Hold the floss at each end across the cake/brownies and push straight down and through. That is THE best way to avoid that crumbling effect. Just make sure you use unflavored floss or the flavor could transfer to your food.

I would suggest not cutting them when you first take them out of the oven and they're hot. Let them cool down first, and become harder rather than mushy.

You can try dipping the knife in a glass of water each time you cut them. I have seen them use this method at wedding receptions when the hotel staff cuts the wedding cake for the guests.

Before you pour the brownies in the pan, pour a little bit of vegatable oil on the pan and spread it out all over the pan. Then pour the brownies and continue to bake. Whenever you take the brownies out of the oven and cut them, they wont stick to the pan!
It works everytime for me!!! :)

Spray a little Pam or vegetable oil on the knife before cutting.

use a wide, flat headed metal spatula and wipe the spatula in between slices.
