I am eating some crackers right now and the question just dawned on me.

Nabisco was one of the earliest American companies to make and market saltines under the brand Premium. Saltines are often eaten as a light snack, with cheese or peanut butter.

By making them white probably makes them stand out from the cheese and peanut butter that you put on.

They are usually made from white flour, shortening, yeast, and baking soda, with some varieties lightly sprinkled with coarse salt.

Saltines are made from Refined White Flour, shortening and liquid. That is a very white mixture that gets a slight brown cast when cooked.
Other crackers are different colors because of the ingredients that are added.

"They" didn't. The white flour in the crackers is what makes them white. In most foods there are other ingredients to give them color, but crackers don't have tons of stuff in them.
