Parboil then stir fry in olive oil and butter with a little nutmeg, garlic and salt.

Yes you can fry them in butter and just test one to see if it cooked. It will do you no harm raw.

Try adding a little freshly ground pepper to the butter it will enhance the taste.

Olive oil would be better than butter.

PS don't fry until crisp

This is probably not the most healthy way to cook them, but my mom used to fry some bacon and remove when done. She would fry the beans in the bacon grease and crumble the bacon on them and serve.

I toss trimmed and cleaned fresh green beans in boiling water for 3 minutes and then pull them out. A little spinkle of salt and a squeeze of lemon on top.

They are also shockingly good in stir fry. Just don't make them wilty by overcooking.

i always make greenbeans for christmas dinner at my moms...and everyone praises them!!

i use a deep skillet and lots of butter just a little water(you want the water to cook out so not much!! (southern cooking...lol)..
-add the green beans (frozen)
-onion..either onion powder, dried onions, or diced fresh..whichever you prefer just put enough!
-a pinch of garlic
-a couple pinches of salt
-a little bit of pepper
-a slice or two bacon
-cook covered for about an hour on medium heat stirring occassionally...longer if you desire

you can also add chunks of potatoes for a plentiful side dish!

----------for fresh green beans--------------
boil them in water for about 5 minutes
melt butter in a skillet
transfer greenbeans to a skillet
add a little chili pepper powder and salt
just a tad spicy but fabulous!
these are going to be a little crunchy still!

The best way to keep the flavour and nutrition in them is to steam them.

They have steaming baskets at wal-mart for a few dollars.

Just put water in the bottom of the pot just under the bottom of the steamer basket put in the veggies and put the lid on put the burner on high and once it is steaming lower the temp to between med and high. It only take five Min's to cook them if you like them slightly crisp. Then you can put butter on them.

Take chopped onions, and canned mushrooms, and bacon( cut into 1 inch strips) and sautee them in the bottom of a saucepan in three tablespoons of butter. When the onions become soft and translusent add your canned greenbeans(drained). Stir them around to coat them in butter and then add a little garlic powder to taste. These are so good, everyone I make them for loves them!!

Note:
You don't have to use onions and mushrooms if you don't want. You can use onion powder instead. The bacon, butter, and garlic powder really give them their flavor.

My mothers have always been my favorite. She doesn't fry them though, she boils them, but yes, she does put butter in them. Just a little for flavor. She also ads just a small amount of sugar and of course bacon.

2 1/4 pounds green beans, ends trimmed
5 tablespoons butter
3 large red and yellow bell peppers, thinly sliced
1 large onion, thinly sliced
1/4 cup chopped fresh marjoram or oregano

3/4 cup sliced almonds, toasted

Cook green beans in large pot of boiling salted water until just crisp-tender, about 5 minutes. Drain. Rinse with cold water. Drain well; set aside. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add peppers and onion and sauté until peppers are crisp-tender, about 8 minutes. Mix in marjoram. (Beans and bell pepper mixture can be prepared 1 day ahead. Cover separately and refrigerate.)

Melt remaining 3 tablespoons butter in heavy large pot over medium-high heat. Add beans and pepper mixture and stir until heated through, about 5 minutes. Season to taste with salt and pepper. Transfer to large bowl. Sprinkle with almonds.

We always keep it simple, steam the beans for ten mins, while you are doing this have a packet of white sauce mix on the go and pour over the beans when serving. Delicious !!!!
