Ice cream is what we call an uncountable noun, like milk or bread. So you would say that you like it very much.

No. Them refers to plural nouns. You COULD say "Do you like all the flavors of ice cream? I like them all". But you couldn't use it if you are also using ice cream in the singular.

"Them" is a pronoun used in the plural sense. Since "ice cream" is singular you would say, "I like *it* very much."
If someone asked you, "Do you like chocolate, strawberry or vanilla?" you could say, "I like *them* all." because even though the ice cream is singular there are plural flavors.

No, you cannot do it. Ice cream is used here to express a general preference on a genre.
I like IT very much

You would only use "them" if you were talking about ice cream flavors since it is plural. Ice cream is singular so you would use "it".
