Heart of palm is often eaten in a salad. There's also the banana heart which is often eaten in soups and curry.

Some lettuces are sold in 'heart' form, notably Romaine, the kind you make Caesar salad from, this is usually the inner bit with the outside leaves removed.

Celery hearts, hearts of palm, artichoke hearts have been mentioned already. Celery bunches that have had the outer stalks removed are typically called 'hearts.' But I've seen Celeriac, or celery root, similar to common celery in appearance; (it is the knobby stem of celeriac that is edible, rather than the stalk) called 'celery heart.'

Carrots have 'hearts' - the inner core, but we don't typically eat them separately from the rest of the carrot.

Wheat germ is the 'heart' of the wheat grain, most of the fat and some protein and vitamins are in there, removing it from the wheat before processing makes the end product last longer, and wheat germ is sold as a nutritional supplement or tasty food addition.

The deep purplish-crimson-coloured banana flower is used as a vegetable from Sri Lanka to Laos. 'Banana blossom' or 'banana heart' are the favoured names in the Philippines and 'banana heart' in Indonesia purely because its colour and shape suggest a heart; (nothing to do with the 'heart' of the trunk used in Burma). In Thailand, slices of tender banana flower are eaten raw with the pungent dip known as nam prik, or with fried noodles, or simmered in a hot sour soup with chicken, galangal and coconut milk. In the Philippines, banana heart is added to the famous kari-kari, a rich beef stew. In Sri Lanka, it is simply 'plantain flower'. In Australia it is known as 'banana bell'.
