i'll make cheesecake for the first time,
1. please tell me the best topings and how to make it?
2. if i use vanilla waffers, should i crush it just like graham crackers n mix it with butter n sugar? or what?

The beauty of cheesecake is that its fairly versatile. Your crust can be made from crushed cookies mixed with butter and sugar, or graham cracker crumbs or zwieback. My favorite is made from chocolate wafer cookies, 1/3 cup of melted butter, and 1 tsp of sugar. Your toppings can range from sweetened whipping cream to a sourcream mixture sweetened with powdered or plain sugar and vanilla. I prefer the sourcream mixture, sweetened and with vanilla topped with fresh strawberries. Good luck!

Chocolate Cheesecake:

Crust: 1 box chocolate cookie crumbs, crushed
1/3 cup melted butter
1 tsp sugar

Combine the above and press 1 1/2 inches up the side of an 8 or 9 inch spring form pan. Place in refrigerator to cool.

Filling: 3 packages cream cheese
3 eggs
1 cup sour cream
1 cup sugar
1 12oz package semi sweet chocolate chips
1 tsp vanilla

Blend cream cheese with sugar and whip until fluffy. Melt chocolate chips and set aside. Gradually beat in eggs, one at a time, taking time to beat after each addition. Beat in chocolate, sour cream, and vanilla. Pour into prepared crust and bake at 350 degrees for 1 hour. It will appear to be undercooked, but do not overcook. Cool and then refrigerate before serving.

Topping: 1 cup sour cream
3 T powdered sugar
1 tsp sugar

Blend together and spoon over slices of cheesecake. Top with fresh strawberries or raspberries.

best toppings is you put a lot of vanilla extract and put all purpose cream or fresh milk, !!!
