I just started a new diet, which involves no white rice, but brown rice takes forever to cook. It's so frustrating when I'm starving!

Murray you must be a genius to come up with that answer LOL. You know what, there are other factors than reading instructions that can affect an outcome ... (type of pot, temperature, cooker etc.)

For brown rice, I use a ratio of 1.5 to 1.75 cups of water to 1 cup of brown rice.
Bring the water to boil, dump in the brown rice.
Bring back to boil and turn heat under pot to simmer.
It usually cooks in 45 minutes. (white rice about 30 minutes)
Also, if you like use can use broth and butter in the liquid.

Brown rice takes longer to cook than white, but 3 hours no way.
Here's what I do when I don't have the time to cook brown rice.
I go to my local Chinese take out and order steamed brown rice, and yes it's hard but that is all I buy. I take it home and measure with a measuring cup usually 1/2 to a 1 cup size, I put the rice on freezer paper flatten it like a hamburger and freeze the pattie's, any time I want brown rice I take out a pattie and micro wave it. You can also do this if you cook it your self, but check the box to see what you are doing wrong. I hope this makes things easier for you. Good luck on your diet.

Standard brown rice takes twice as long to cook as white rice, although there are some quick brown rice products available. Also, brown rice should be used within 6 months because it has a high level of natural oil within the outer bran layer making it subject to rancidity. It can be refrigerated or frozen for longer shelf-life.

Unless it's instant rice, it'll take 45 minutes at least to cook the stuff. If you're cooking for four, it'd help to get a small pressure cooker and learn to use that - it'd cut your cooking time in half.
