I am guessing you tried it cooked...eeeww!! Try it fresh, as a salad...it tastes very much like field greens. Here is a great summer time recipe.

2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds
What you do:
In a large bowl, toss together the spinach and strawberries.
In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Yes. You can make a dip out of it for crackers and veggies. Just cook up a pack of frozen spinach and add cream cheese and a little onion soup mix to it to taste.

Or you can make a fritatta. Take some already cooked spinach and scramble it into some eggs, adding a bit of milk. Fry up some onions, peppers and tomatoes in a bit of olive or canola oil. Add a bit of butter when they are cooked. Then pour the spinach egg scramble over it and cook it like an omelet. If you like feta cheese, throw in some crumbles. It's delicious.

To me, spinach tastes best raw, in a salad.

You can use any kind of salad ingredients, and any dressing you like. But one of my favorite spinach salads has some sliced boiled egg, some red onion, walnuts, bacon bits, goat cheese, and a honey-Ginger vinegaret dressing

Hide it in your food:

Put it on your sandwich instead of lettuce.
Mix it into your pasta sauces
Mix it in your rice or another vegetable that you do like

If you want to eat it as a side, add a small amount of bacon grease (like 1/4 teaspoon)
