Evergreen is a tricky term. Conifers are evergreen for the simple reason that they grow new leaves (needles) before they lose the old ones. Some trees like the live oak are evergreen and do the same thing. So they have a health set of leaves all the time. Ebony, which is found in deep south Texas is also evergreen. It has compound leaves that drop off as the new ones appear.

Not all evergreens are coniferous, nor are all conifers evergreen.

Assuming you live in the northern hemisphere and in a temerate zone, your basic evergreen is a conifer. If you have a larch (Larix), you have one of the only deciduous conifers near you.
Conifers periodically and constantly loose individual bundles of leaves- each of which is around for a couple years. If you have a conifer which isn't a larch that has lost all of its leaves all at once... chances are that it is dead.

Evergreens are confirous; which means they maintain their leaves all year round. If they do loose their leaves, they most likely will not grow back, because the tree is not used to growing back leaves.
