Unfortunately, I am not a student and I do wish to do this legally.

What you are looking for is next to impossible Carrie. An H1B visa or work visa is the only legal work visa and this takes a long time to process and has numerical limits. Today they are applying for jobs for 2008.

Your term "work vacation" sounds temporary in nature like seasonal workers in the resort business and the like. You can only do that kind of job illegally.

IT, HealthCare, Fiannce, Teaching, Legal, Marketing, Sales are some of the jobs a sponsored employee can apply to.**

Well if you're not a student then it's gonna be alot harder for you. Really the only way you can work in america if you're Canadian is to get a company to hire you and sponsor you (give you a work permit). You have to get someone to hire you first and be willing to sponsor you. You can't just get a work permit and then look for a job...unless you are a student. Even then there are alot of rules. You can't get a social insurance number in america until someone hires you but most people wont hire you if you dont have an american social insurance number lol catch 22.

A lot of vacation resorts in the USA use seasonal foreign workers to staff the restaurants, hotels bars etc... I do no know how they get those jobs but I have met some of those people while on vacation.
