First off its very commendable you have such note worthy goals set. But a 3rd yr in language wont make a huge impact. Ask a peditrition and see what they say!

If you are want to be a pediatrician, I am guessing that you will major in Biology or Pre-med in college, am I correct? Most colleges have a language requirement. This means that you have to take several semesters of a foreign language. Taking a language on the college level is a lot harder than it is in highschool. The more language experience you have in highschool, the better you will do when you take language classes in college.
If you know where you want to go to college and what your major will be, you can go to the college's website and see if the college has their academic catalog posted. In this, you can look at the major you will choose, and it will tell you have many language classes (if any) you have to take.

Yes and no...
They won't care for it in consideration of the weight of the science and math courses you've (presumably) taken, but they will care at the same time for other reasons...those being the human ones.
