I would want to sit next to my spouse and have the couple we're dining with sit across. That's what we do with friends.

I sit next to my hubby and the lady if at a table. If in a booth I sit next to my husband across from the lady. It is the easiest to talk to each other should the other lady and I carry separate conversations. Also, I'm next to my husband if I need to kick him or pinch him under the table - just kidding.
