What I love doing is making "mock" potatoes. Take steamed cauliflower and blend it in a blender until smooth. Use milk to make the mixture smooth, add powered chicken stock(I hate the cubes, they are a pain) to taste. You want to have it look like the consistency of mashed potatoes. If you want then really creamy add a teaspoon of non-fat/or low-fat cream cheese. You won't be disappointed. Plus now when they have potatoes...so can YOU! :0)

Get to know quinoa. It's a nutrition-packed whole grain that's a great substitute for rice, and as easy to cook. Cook according to package directions, or add some boullion to flavor it; then toss with lemon juice and olive oil, and any pan juices from the fish, for preference. Yummy, healthy, low-calorie.
Oh yeah, and any steamed or roasted veggies would also be great, you can season them the same way as the fish.

I like to saute some sweet onion, mushrooms, snap peas, and whichever color bell peppers I happen to like or are on sale at the store, in a little olive oil with minced garlic. Throw in some salt & pepper to taste and viola...a colorful blend of healthy veggies with lots of different textures and flavors. Really easy, very yummy, and super good for you!

A green veggie sounds good, like Brussel sprouts, broccoli, asparagus, steamed. Also, brown rice, wild rice, or a baked potato. Ooooh, squash sounds good with wild rice, too. You can buy frozen squash in the freezer section.

instant brown rice, instead of all water use orange juice as half the liquid amount, steamed broccoli, with a little squeeze of lemon/lime juice-or-

Steamed broccoli with a teeny, tiny, itty bitty sprinking of parmesan is outstanding. Salad in a bag is nice, you can grab out a handful whenever you want it.

like both, fruits: berries, oatmeal, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... We guess the two are great.
