I'm cookin a 1st dinner for my boyfriend. He wants baked chicken and mashed potatos. I would normally put a veg as a side to go with but he doesnt eat any vegetables...what else could I do along with the chicken and mashed potatos? N remember this is the 1st time I am cooking for him so I need it to be special! Thanks in advance for help!

Baked Apples
INGREDIENTS
6 apples - peeled, cored and sliced
1/2 cup white sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup whole milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, or coat with non-stick cooking spray.
Place apples in a large bowl. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves. Stir spice mixture into apples until evenly distributed. Fold in raisins and walnuts. Spoon into prepared dish. Pour milk evenly over apple mixture.
Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly. Allow to cool slightly before serving.

A rice or noodle side dish - use the good ol' rice a roni or pasta roni or whatever the heck it is. You could also use stuffing (although we use that in place of mashed potatoes and you already have that on the menu). Is there not a single veggie he will eat? Like broccoli & cheese sauce? Asparugas (sp?) and hollandaise? Buttered corn?

I don't think you need another starchy side with mashed potatoes. That pretty much leaves veggies and fruit. He really doesn't eat any veggies? Not even carrots or corn?

You could always make a nice gravy full of herbs and garnish the plate with herbs and small strips of red pepper so it doesn't all look brown.

Yeah, mashed potatoes would be great!
Or, get some garlic or french w/ butter bread.
That`ll be delicious.
You could also just make him eat your vegetables that you make. Like make him a salad or some corn on the cob.

I like to Stove Top Dressing with Cream of Mushroom soup. Got to try that one sometime. You can always do something like a rice pilaf, macaroni and cheese, or some seaoned noodles. I was reading all of the answers, and all of them are good suggestions.

I'd go with biscuits or a roll. You can get them in tubes at supermarkets and they are really easy to make, just follow the instructions on the package. My favorite would be the crescent rolls and they even look kinda fancy.

Stove Top Stuffing for chicken is great! Mix in some cream of mushroom soup and add the chicken, and it is serious!

1.Cook the chicken with pineapple slices on each piece.
2.Cranberry sauce (or jellied).
3.Macaroni and cheese (topped with bread crumbs)
