Yeast grow by consuming sugar. In bread, most of this is taken from the flour which is predominantly starch (long strands of sugar). The warmth and moisture of dough combined with the natural sugars in the flour, are great growing conditions for yeast and therefore they consume more and give off more carbon dioxide (which makes the dough rise).
