I have to take a congealed salad to our church social....any good recipe ideas out there? Thanks!

I don't have it with me right now, but it calls for lime jello, pineapple, cream cheese, mayonaise, chopped pecans, and mini-marshmellows, remind me and I will bring the exact recipe to you.

1 pk Lime Jello
1 c Boiling water
3 oz Pkg cream cheese
2/3 c Crushed pineapple, w/juice
1/4 c Chopped nuts
1/2 c Heavy cream, whipped
1 x Cherries (optional
garnish)



Directions:

Dissolve gelatin in boiling water.
Add chunks of cream cheese. Using mixer, beat at medium speed until well blended.
Chill until slightly congealed. Add pineapple, and nuts.
Fold in whipped cream. Pour in 3 cup mold and let set. Turn out on lettuce leaf and garnish with cherries if desired.

There is a recipe in my family that comes down from my great grandmother and it is very delicious AND healthy. We prepare it for everything-Memorial Day, 4th of July, Christmas, Thanksgiving, etc.

Prepare two small boxes of cherry gelatin.
Stir in 1/2 cup chopped celery, 1/2 cup walnuts, 1 can whole berry cranberries, and 1 can crushed pineapple.
Stir together and pour into an oblong glass baking dish.
Let set several hours.

My mom introduced me to this salad and I love it!

Lime Jello Congealed Salad:

1 large package lime jello
1 cup mayonaise
2 cups cottage cheese
1 can crushed pineapple (do not use fresh!)
1 cup chopped pecans

Make jello according to directions, but instead of adding cold water, add mayonaise and cottage cheese. Stir until smooth and add pineapple and pecans. Refrigerate until firm. Serve with sour cream and more chopped pecans if desired.

Congeal Salad
INGREDIENTS
1 (6 ounce) package fruit flavored gelatin mix
1 (8 ounce) package cream cheese, softened
32 ounces large curd cottage cheese
1 (15.25 ounce) can fruit cocktail, drained
1 (20 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin orange segments
1 apple - peeled, cored and diced
1 banana, peeled and sliced
1 (10 ounce) jar maraschino cherries, drained
1 cup chopped walnuts
DIRECTIONS
Prepare gelatin according to package directions, substituting 1 cup cold water with 1 cup crushed ice. Place gelatin into freezer until almost congealed.
Place cream cheese in a bowl and beat until smooth. Fold cream cheese into gelatin. Add cottage cheese, fruit cocktail, pineapple, oranges, apples, banana, cherries and walnuts. Mix well.
Pour into mold or dish and refrigerate until completely set.



Blueberry Congeal Salad
INGREDIENTS
2 (3 ounce) packages blackberry gelatin
2 cups boiling water
1 (15 ounce) can blueberries
1 (8 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1 cup sour cream
1/2 teaspoon vanilla extract
1/2 cup chopped pecans
DIRECTIONS
In a large bowl, dissolve the gelatin in boiling water. Drain the liquid from the blueberry and pineapple cans into a measuring cup and add enough water to make 1 cup of liquid. Stir the juice mixture, blueberries and crushed pineapple into the gelatin and pour into a 2 quart mold. Refrigerate until firm.
Mix together softened cream cheese, sugar, sour cream and vanilla and spread over the congealed gelatin mixture. Sprinkle cream cheese layer with chopped pecans. Chill for approximately 30 more minutes, invert and serve.
