I'm not the world's greatest cook. I like simple recipes that don't take a lot of effort. I like casseroles because everything is in one pot, less to clean up. What's your favorite casserole recipe? Please, NO tuna casserole recipes!

Chicken Tortilla Casserole



My aunt in California shared this zesty chicken casserole recipe with me. It's easy, filling and feeds a big group. —




INGREDIENTS


5 to 6 corn tortillas (6 inches), cut into strips

8 cups cubed cooked chicken breast

1 can (4 ounces) diced green chilies

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

1 cup (8 ounces) sour cream

3 cups (12 ounces) shredded Monterey Jack cheese




SERVINGS 8-10


In a greased 13-in. x 9-in. x 2-in. baking dish, layer half the tortilla strips, half the chicken and half the chilies. In a bowl, combine the soups and sour cream; spread half over the chicken. Top with half the cheese. Repeat layers.
Bake, uncovered, at 350° for 45 minutes or until bubbly and golden brown. Let stand for 10 minutes before serving. Yield: 8-10 servings.

SIMPLE TATOR-TOT CASSEROLE

1/2 1 lb beef
1 can green beans
1 can corn
2 12oz. cans cream of chicken/mushroom
1/2 cup water
enough Tator-tots to cover the top of dish
shredded cheddar cheese

Brown the beef (preferably 7% fat or less). Place the beef into the bottom of a 13x9x2 in. casserole/baking dish.
Combine green beans, corn, cream of chicken/mushroom, and water in a medium bowl. Pour the mixture over the beef.

Arrange the Tator-tots to cover the mixture.

Bake in a 350°F oven for 20-25 minutes, or until Tator-tots are lightly browned. Sprinkle shredded cheese over the top and bake for 5 more minutes.

Let cool on wire rack for 5 minutes, then serve!

EGG SAUSAGE CASSEROLE

1 lb. bulk sausage
6 eggs
2 c. milk
1 c. grated cheddar cheese
1 tsp. salt
1 tsp. dry mustard
2 slices bread, cubed

Brown and drain sausage. Beat eggs with milk, salt, and mustard. Layer bread on bottom of buttered casserole, sprinkle sausage, top with cheese. Pour egg mixture over all. Bake 30-40 minutes at 350 degrees for until top is browned. Serves 6 and may be doubled.

Campbell's® Cheesy Chicken & Rice Casserole
From: Campbell's Kitchen
Prep Time: 5 minutes
Bake Time: 45 minutes

Serves: 6



Ingredients:


1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
2 cups fresh or frozen vegetables
1/2 tsp. onion powder
4 skinless, boneless chicken breast halves
1/2 cup shredded Cheddar cheese



Directions:



1. Stir the soup, water, rice, vegetables and onion powder in a 12 x 8” shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375°F. for 45 min. or until done. Top with cheese.

TIP: Italian: In place of onion powder, use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar.

Mexican: In place of onion powder, use 1 tsp. chili powder. Substitute Mexican cheese blend for Cheddar.

Taco Bake
1 bag of tortilla chips
1 lb ground turkey or beef
1 small can of diced green peppers
1 bottle of medium taco sauce
1/2 onion diced
shredded cheese
1 can of refreid beans
Directions:
Cook the ground meat and diced onions in olive oil. Cook until meat is fully cooked. Add the can of diced green peppers and the bottle of taco sauce and stir together.
In a baking pan layer the bottom with tortilla chips, add some beans, cheese, and meat, then another layer of chips, beans, cheese, and meat. Keep layering.
Cook in the oven at 350 for 25 minutes.

1 ham steak diced
1 can of cream of mushroom soup
1 can of cream of celery soup
1 soup can of milk
2 cups of fast cooking rice
1 small diced onion browned slightly in a tbsp. of butter
1 20 oz. bag of broccoli cuts
1 cup of shredded cheddar cheese
Combine all in a 9x13 pan.
Bake at 350 degrees for about an hour or until rice is tender.
This is a great one for pot luck dinners. Serves 4-6 people

One of my family's favorite is a hamburger & potato casserole. You layer hamburger on the bottom, then a layer of thinly sliced fresh potatoes and thinly sliced onion, then another layer of hamburger, another layer of potatoes and onion, and then top it with a can of creamed corn and salt and pepper to taste. Cook in a 350* oven for approx. 1-1 1/2 hours depending how your potatoes cook up. Please check after 1 hour. It is super easy to put together and fairly quick because you just have 4 ingredients.

I have 2, the easiest one is by stovetop, you take chicken breast meat, mix w a can of cream of mushroom, spoon that into a glass casserole dish and mix stuffing according to box, sperad that on top and bake....yum...another on that is my favorite, is turkey tetrazzini by martha stewart, its is fantastic and will really impress even the finest of tougues, not too tough, and the taste is great. Mexican style? try making taco meat and layering doritos or plain chips, cheese, salsa, onions finley chopped, a can of refired beans, more chesse and more chips on top, bake until melty in glass casserole

If you have picky eaters like me, try something like this:

Tater Tot Casserole

2# Ground Meat (of your choice), browned and drained
1/2 cup chopped onion
1 can cream soup (we use cream of mushroom)

Mix these ingredients together and spead in the bottom of a 9 x 13 baking pan.

Spread one drained can french style green beans over the meat mixture. Layer slices of american cheese over the beans (I use 8 slices). Cover with a single layer of tater tots.

Bake using directions on tater tot package.

Yummy! I think I may make this tomorrow - thanks for making me remember I hadn't added it to our rotation in a while!
