You sound just like my fiance. If he sees a shred of lettuce on a taco from taco bell, he will pick it off. He will only eat corn and potatoes (the starchiest ones).

Really, it is something that only you can overcome. No advice that I can give you will change your mental taste buds. With him, all I ask is that he tries a bite of every veggie that I eat wherever we go. The reason: different veggies taste different, and they can be cooked and seasoned a variety of ways. You may try, for example, asparagus. It has a distinct taste. Raw, broiled in butter, grilled with EVOO and garlic, or in a pasta dish. It has been, I'd say, 50% effective. He tried sweet potato casserole for the first time this Thanksgiving and actually liked it. He tried french cut green beans and hated it BUT gave green bean casserole a try and liked it. Please try new things whenever you have the opportunity. One bite. Small bite. Slowly...your mind will adapt. One day you may surprise yourself.

Try a veggie with something junky! Such as the Fried Green Beans at TGI Fridays, or the Fried Asparagus at Houlihans. Try Avocado mixed with salsa and dip tortilla chips in it. Cover your veggies in cheese sauce. None of these things are especially good for you but it's a start! Also... now with summer on it's way make sure you buy the freshest veggies. Fresh anything tastes a zillion times better than something that's even a few days old. I am guessing that you have probably been fed overcooked veggies from a can for most of your life. Maybe I am wrong - but regardless... fresh is best! How about a taco salad? Load it up with meat and cheese but use plenty of fresh Romaine lettuce and beans, onion, tomatoes, and anything else you would like.

Also... try roasted beets. They shouldn't even count as a veggie because they taste like candy... and some butter and you might love them!

Pizza! Add them very discreetly to pizza. Work your way up to more and different, but start with one at a time... For example, make an big yummy pizza with sauce and meat and cheese and finely chop up maybe 1/4 cup of bell peppers. Hide them under the cheese. If it's okay add more next time or leave them on top. Once you've got it down add another veggie. Eventually you will be able to just eat the veggie.

I did this with my husband. We are still working on it. But we have veggie phases.

Phase 1:
Corn
Green Beans
Carrots
Peppers
Peas

Phase 2:
Broccoli
Snow Peas
Zuccinni
Squash
Onions
Lettuce

Phase 3:
Spinach
Mushrooms
Brussel Sprouts
Cauliflower
Other Greens (cooked and raw)

Also try hiding the cut up veggies in pasta dishes (cream or tomato sauce) or a kind of soup you already like.

I would look at veggies in an entirely different light than you do now. It's hard to imagine not liking a SINGLE one of them..
What about snow peas? Steamed brocolli? red, yellow, or green peppers? See them for what they are -- good for you.

If you can't overcome it, eat more fruits.

do you like cheese sauce if so put that on them or can you drink the veggie juice like v-8

1] try dip - onion, ranch dressing, guacomole, salsa
2] try sauce - cheese, chili
3] in a sandwich
Make sure to try fresh or frozen, then cooked - some of that canned stuff would make me swear off vegetables.
Remember - milk makes you grow and meat makes you strong, but fruit and vegetables make you beautiful!

not even corn? everyone loves corn

grate, shred, or chop them up really small and incorporate them into pasta sauce

i can't imagine life without veggies. my faves are spinach, broccoli, zucchini, brussel sprouts, and asparagus. i really love beets also.

i'm the same way. i don't eat ANY vegetables whatsoever. i just can't. maybe we should start a support group :)
