Wow, thanks all, what great ideas. By the way, here is the recipe. It's really worth trying, even if you don't like carrots (I didn't before this).
Carrot Burgers
Recipe #149006 from Recipezaar

5 medium carrots, shredded (about 2 cups)

1 small yellow onion, finely chopped

3 tablespoons flour

2 tablespoons cornmeal

1 egg, lightly beaten

2 tablespoons full-fat Ranch dressing (must be full-fat, it’s only 2T)
1 teaspoon dried dill weed

1/2 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon baking powder

1/8 teaspoon black pepper

2 tablespoons margarine

1 tablespoon olive oil

1. In a medium bowl, mix the carrots, onion, flour, corneal, egg, ranch dressing, dill, sugar, salt, baking powder and pepper. Shape the mixture into 8 patties about 1 1/2" thick. Transfer to a platter, cover with plastic wrap and refrigerate for at least 1 hour. This will keep up to 12 hours.

And here is the ranch dressing recipe.
Ranch Dressing

1 cup mayonnaise


1 cup buttermilk or yogurt (dry buttermilk is fine)

2 teaspoons parsley

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

Dash of dill weed

1/8 teaspoon pepper

Get out a medium sized bowl. Measure the mayonnaise into it. Gradually whisk in the buttermilk or yogurt. If you use powdered buttermilk, whisk in the powder first, and then slowly add a cup of water. Then add the seasonings. Whisk again. Or you can make it in the blender by putting everything into the blender and whirling until smooth. The mixture will be a little thin, but it will thicken on standing. Store in a pint size jar, makes 2-cups. Keep in the refrigerator for a few weeks. Tastes really good with yogurt by the way. This is my favorite way of making it. It tastes good with powdered buttermilk too, but the consistency is thinner than with yogurt.

ASHLEY'S CARROT PATTIES

1 1/2 c. carrots, grated
3 tbsp. onion, grated
3 c. bread crumbs
3/4 tsp. baking powder
2 eggs, beaten
1/4 c. milk
1/2 tsp. salt
1/8 tsp. pepper
3 tbsp. butter or bacon fat

Combine all ingredients except butter. Mix well. Form into patties, about 3" diameter. Makes about 12. Heat butter or bacon fat in a skillet, brown lightly on both sides. Serves 6.

INGREDIENTS
1 pound carrots, grated
1 clove garlic, minced
4 eggs
1/4 cup all-purpose flour
1/4 cup bread crumbs or matzo meal
1/2 teaspoon salt
1 pinch ground black pepper
2 tablespoons vegetable oil
DIRECTIONS
In a medium size mixing bowl, combine the grated carrots, garlic, eggs, flour, bread crumbs, salt and black pepper; mix well.
Heat oil in a frying pan over medium-high heat. Make the mixture into patties, and fry until golden brown on each side.

Pate means paste, not patty. Croquette is more appropriate.
