Eggs can be a binder, a leavener, add moisture, and perform many other functions in a recipe. Sometimes mayonnaise can be used, with an adjustment (reduction) in oil, because mayo contains egg. I wouldn't recommend trying it without a recipe. If you don't want to buy a whole carton of eggs, use an egg substitute (egg beaters)

Depending on what you're making, 1 tblsp. mayo may be substituted for 1 egg. Don't forget to take into consideration the oil it contains & and adjust that. One of my favorite recipes: *Mayonnaise Dinner Rolls* Mix 2 cups self-rising flour with 2 tblsp. mayo. Mix completely until it is grainy. Mix enough milk in to make it pourable. Spoon into greased muffin tins. Bake 425* for 15-20 minutes,

I don't know of a good substitute besides maybe EggBeaters. Do you have a neighbor close by? Ask them if they can spare an egg. Usually neighbors are pretty good about it and tell you that you don't need to repay them or anything. But if it's cookies I take them some to say thanks.
