This is a trick that I learnt from a cute chick. Two things make the samosas crisp. Before preparing the dough, heat some oil (the quantity that you would add while making the dough). Add this to the all purpose flour and then, add water and knead well. The hot oil makes the samosas crisp. If you are a fan of fat free foods, make sure the filling is pre-cooked and does not require any cooking. Fry the samosas in hot oil. This lets them absorb minimal oil while giving a crisp hotel taste. Good luck.

Reduce the water quantity while preparing both wheat/or maida and preparing boiled potato while squeeze the potato along with other ingredients. Not allow the oil to give smoke( This is rather difficult task) Let minor smoke level be there. then the out come will be crispy Samosas

To make vegetable samosa crispy add thin cut slices of potatoes with other ingredients and fry in very hot oil to get outer layer also crispy.

Sure !!!! But pls spell check first before u submit.
The trick is to fry them on slow fire.
If u fry on high heat, the cover gets cooked fast and is soft and succulent.

add a pinch of baking soda/ or a tsp of besan/or a bit of oil while kneading the dough for it
