Should I just stick with plain crackers or are there any specific brands, flavors that go well for a wine and cheese tasting?

Water crackers or table crackers are really en vogue right now.

I think that water crackers are the way to go because during the tasting you are really trying to taste the flavors of the cheese and wine. Water crackers don't have much flavor so it is really a blank crispy canvas for the flavor and texture of the cheese.

I found Club Multi-Grain crackers and have used those a lot. They go well with any kind of cheese, and wine as well. They are not as 'fancy' looking, but it's the taste that matters here. You can mix them up with the water crackers as suggested, or any other cracker for that matter.

good luck!

Carr's table water crackers. They don't affect the flavor of the wine or cheese.
