The SRAM website has videos you can download. They are specific to SRAM products, but most of it translates well to other brands.

Your best bet is to watch and learn from someone who knows what they are doing. Start by making minor adjustments yourself and going to someone for the harder stuff. Eventually you'll be able to take your bike apartand put it back together in one sitting. That's how the shop guys learned what they know. Pick their brains, if they have a good business they won't mind one person knowing how to do their own repairs. They know you'll reciprocate in time.

No, it's not rocket science, but it does take experience and technique to do it right. Even if the shop guy knows his stuff, NO ONE works on my bike but me.
Park Tool has many articles on repair and maintenance, and Barnett's Bicycle Academy has some large .PDF files from their manuals that you can download.

Go to parktool.com check out their tool school for a location near you. It's hard to learn to be a bike mechanic online although you can get info on basic mainetance.

try this site:
http://www.utahmountainbiking.com/
they sell a lot of parts and equipment and also if you scroll down on the left side, you'll find a "Fix it-bicycle repair" section that has a visual guide to repairing many aspects of a bike.
if you are willing to spend a few bucks, you can get these books from Amazon:
Zinn and the Art of Moutain bike maintainence
