How much money are you looking to spend for this project? Some countries will be less expensive than others. Here is a suggestion for if you have some cash to spend.

ITALY
appetizer = melon (cantaloupe) wrapped in proscuitto

meal = gnocchi alla sorrentina - gnocchi with a light tomato sauce and mozzarella cheese (in Italy there are generally two courses, pasta then meat, but you can just do one)

dessert = tiramisu

Ireland:
Appetizer: soda bread (bread made with bread soda instead of yeast, which doesn't rise well in the Irish climate), with salted butter and smoked salmon (Ireland produces some of the best smoked salmon in the world)
Main Course: either bacon, cabbage (or kale if you can get it) and potatoes (lots of opportunity to discuss the potato famine and the importance of cabbage in European peasant cusines) or Irish stew (mutton is big in Ireland, the stew is cooked long and slow because the Irish traditionally used the older, tougher parts of the sheep for it, hence 'mutton' rather than 'lamb').
Dessert: scones (pretty much the same recipe as soda bread but sweetened) and jam.

Great Britain -England- Sausage rolls for appetizer. Just buy pillsbury dough and Bob Evans bulk sausage. Wrap bits of the sausage in the dough and bake.

Do a boiled dinner of Ham, potatoes, onions, carrots, cabbage.

Make Trifle for dessert. Layers of pound cake, pudding, and fruit. Top with whipped cream in a large glass bowl.

I would begin with a soup maybe cream of potato always a win with the croud
then for an entree i would make a montecristo sandwhich
with chips
For desser i would choose a mousse or a floating island

Italy is easy-make baked ziti, bruschetta for appetizer and bring some cannoli for dessert.

Or Mexico -make Arroz Con Pollo, churros for dessert and nachos with cheese and salsa for appetizers.

Mexico: pico de gallo with tortilla chips as the appetizer, chile relleno for the entree, and flan or jello for the dessert. In mexico, they love love love jello!

what about Jamaican?? lots of recipes you can look up on internet.. their island dish is salt fish and ackee.. but can do curry chicken, rice and peas, take in fruits, mangoe all kinds to choose from, could take in some good music too.. have fun..
