anyone has a date+walnut cupcake recipe? my mum seem to like the combination and i thought i'd bake her some cupcakes for moms' day.

DATE NUT CUPCAKES

1/2 c. shortening
1 1/4 c. brown sugar
2 eggs, well beaten
1 c. buttermilk
1 tsp. vanilla
2 c. flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. salt
3/4 c. dates, chopped
1/2 c. chopped nuts

Cream shortening and brown sugar. Beat in eggs and vanilla. Sift dry ingredients together and mix with dates to prevent dates sticking together. Add dry ingredients and buttermilk alternately to creamed mixture. Add nuts. Fill cup cake paper 2/3 full and bake at 375 degrees for 20 minutes. Can be frosted, but good without. Alternatively, you can put in a bag of powdered sugar while warm and shake gently. Wonderful!

Here's something creative that will be appreciated and you will have fun doing:

Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!

The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.

Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.

Use graph paper, and pictures from magazines if you are not as good on the computer, and it will give it a homemade feeling.

WONDERFUL CUPCAKES

1 1/2 c. boiling water
1 c. finely chopped dates
1 tsp. baking soda
3/4 c. shortening
1 scant c. sugar
2 eggs
1/4 tsp. salt
1 tsp. vanilla
1 1/2 c. plus 2 tbsp. flour
6 oz. chocolate chips
1/2 c. walnuts
1/3 c. sugar

Pour boiling water over dates. Add baking soda and cool. Cream shortening and sugar. Add eggs, salt, vanilla and flour. Combine both mixtures and pour into lined muffin cups.
Combine chocolate chips, walnuts and sugar. Sprinkle on top of each cupcake. Bake at 375 degrees for 30 minutes. Makes 18-24 cupcakes.

Here's a recipe for you. Make it in a loaf pan or modify and put it in a muffin tin.

Date and Walnut loaf
INGREDIENTS
1 cup dates, pitted and chopped
1 cup water
1/2 cup butter
1 cup white sugar
1 teaspoon baking soda
1 1/2 cups all-purpose flour
1 egg, beaten
1 teaspoon vanilla extract
1 cup chopped walnuts

1/4 cup butter
1/3 cup heavy cream
1/2 cup brown sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a saucepan over medium heat, bring dates and water to a boil. Stir in 1/2 cup butter and 1 cup sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts. Pour batter into prepared pan.
Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Serve slices with Warm Sauce.
To make Warm Sauce: In a saucepan over medium heat, combine 1/4 cup butter with cream and brown sugar. Heat, stirring constantly, until mixture boils and sugar is dissolved.
