In Italy meat can't be sold on the open air markets.
We have only butcher's shops or supermarkets where meat can be sold.
In Tuscany we have many good butchers shops in practically any village. The most renowned is Macelleria Dario Cecchini.
Here's the website with tons of info.

Here is a link with address and phone # of the best butcher's shops in Tuscany.

I'm living in the neighbours of the second of the list (Falaschi Sergio) and this is offering a very good meat at lower prices than the extra-famous above Cecchini.

PS - If you want taste the best T-bones (Fiorentina) look for the meat of bovines from the Chianina breed (native race of Tuscany).
