I want to run straight into my S/PDIF Output to my home surround speakers w/o hooking all my speakers into the sound card because they are "bare" wires. Can I run off input / output jacks? I am using RCA 's (red and white) from S/PDIF to Aux on 5.1 Dolby Surround System. There's not enough info in the instruction manual to go by. Does anyone know enough about Soundcards to help me? Like to make it work properly. Please advise.

You are confused
S/pdif is a SINGLE wire, optical or coax. You connect it from the output of your sound card to the input of an AV Receiver where you have connected all your speakers.

RCA (Red/white) output is STEREO only.
