RASPBERRY MOUSSE serves 4

I was pleasantly surprised at how light, fluffy and de-licious this recipe is: protein 9.5g, fat 2g, carbs 10g, fibre 2g, cholesterol 4mg; 355kJ (85 cal). Looks best in a glass as you can see the layers.

1 envelope gelatine (3 teaspoons)
1 cup low-fat vanilla yoghurt
400g low-fat fromage frais or light vanilla Fruche
4 egg whites
150g raspberries (mashed but reserve some for garnish)
Mint leaves for garnish

1. Sprinkle the gelatine in an even layer onto 1 tablespoon water in a small bowl and leave to go spongy. Bring a small pan of water to the boil, remove from the heat and place the bowl on the pan. Stir until clear.

2. In a large bowl, stir the yoghurt and fromage frais together, then add the gelatine and mix well. (I've been convinced that gelatin needs to be poured in a steady stream from a height- works for me!)

3. Using electric beaters, beat the egg whites until stiff peaks form, then fold through the yoghurt mixture. Transfer half to a separate bowl and fold the mashed raspberries through.

4. Divide the raspberry mixture into the bases of 4 long glasses or serving bowls. Top with the vanilla mixture. Refrigerate for several hours, or until set. Decorate with fresh raspberries and mint leaves.

Mmmmm, think I'll make a mixed berry version for tomorrow night.

In a blender:
1 cup fat free milk - 90 calories
4 TBSP Cool Whip Free - 30 calories
Equal, Splenda or Sweet and Low (1 or 2 to taste)
dash of Vanilla extract
Blend and enjoy a low cal Milk Shake

Instead of the Vanilla you can use 1/2 cup of fresh fruit like strawberries, raspberries, peaches... You can replace 2 TBSP of the Cool Whip with a piece of banana for thickness.
Create your own variations and check the calorie values on a calorie guide.
I also sometimes use unsweetened cocoa powder for a chocolate fix instead of the vanilla or fruit but I aways use fat free milk, Cool Whip Free and Equal or Splenda, I don't like Sweet and Low.

Strawberrys and whipped cream. Just a touch of the w/c. Jello is good and combined with Strawberrys or w/c makes it fancier. Strawberries have very little sugar and no Carbs which turn into sugar. Whipped cream is mainly air,use regular jello 'cause it doesn't have that many calories, unless you like the sugar free but I can't handle it.I don't believe in diets so I just go with what's best in the first place.Fruits are good but if you use canned, go with lite syrup. Good luck and don't deprive yourself.

I eat Dannon nonfat vanilla yogurt topped with fresh fruits(like strawberry or blueberry) and grapenuts trailmix crunch. Its pretty good for a low cal, lowfat and low sugar dessert. You also can't go wrong with sugar free jello

Try fruit. I take an apple and cut it into slices, sprinkle cinnamon and equal on it, cover with plastic and microwave for about 2 min. Plain yogurt with died fruit is great. Berries with some sugar free cool whip is awesome. Be creative.
