"Down to earth" means: sensible, practical, geniune.
OR
a vague, meaningless expression that a wide variety of people use to express an undefinable positive quality in an other
For instance:
"Those two police officers were really down to earth, weren't they?"
"This ski lodge has down to earth feel to it, don't you think?"
"Rainbow is one of the most down to earth individuals I know."
"Say what you want about George Bush, but he's a down to earth kinda guy."
"The astronauts were the down to earth sort"
"REI and Eddie Bauer outlets have a down to earth feel to them."
OR
A grossly overused, idiotic phrase which technically means "one who has no imagination." The funny thing is, the type of people who generally assign this quality to themselves are the artsy-creative type. To many drugs will do that too you.
The quality users are trying to express is: genuine, real.
That guy is really "down to Earth..." oh he is huh? well thank god he is not "up on Mars."

A down-to-earth guy is one who is not stuck up. He mixes with all types of people especially if he is from the higher echelons of society. He does not feel that he is more than anyone else.
An easy-going-guy is one that doesn't let anything bother him.He is calm, cool and collected.

A "down to earth guy" is humble and practical in their thinking and manner of behavior. An "easy going guy" is not easily made to act out of anger.

to me it means, going by the old standards,opening doors for women,lighting their cigarettes,pulling out the chair for them,etc
