You might inform your hostess that you have some serious food allergies and a sensitive stomach and beg off with something to drink or something less disgusting to eat. If this hostess has a habit of making things you don't like, or can't tolerate, then perhaps you can offer to do "pot luck" or come for dessert (which you bring!) because of another engagement.

If it's something normal...like tacos or hamburgers...something that you've heard other people eatting before say that you had a bad experience with that type of food before and it made you sick and ever since then you don't want to eat it.
Say you're can't eat something they've put in it and sound really upset when you say so.
Say you ate something before coming over and you're really not that hungry.
Say you've felt sick to your stomach all day and you're really not up to eatting much.
Things like that.

if you were not invited to dinner and they offer dinner.......say you just ate before you left home. Or, you say you had a previous dinner engagement for later, and you will just stay to have a drink or two. Or you say you are allergic to that particular disgusting item, and say you'll have a drink or two AND double dessert

Say you are allergic to a rare ingredient in the dish. They will believe you, instead of saying something like "I am allergic to milk." they won't believe you because who is allergic to milk? Anyway, I am rambling so just say "I am allergic [to whatever], sorry!" =] Hope everything works out!

Just make up a horror story from when your mother made you eat that *something discusting they are cooking* and you got terribly sick, and you just haven't ate any since.
Or you could say you've already eaten....
:)
Or you could man up and just eat it!

Eat some. You might like it. You say: "This is pretty exotic stuff, I can't wait to try it. I hope I like it." If you don't like it, just say so.
