does anyone have a breakfast casserole recipe type thing that is not the usual strata or bread egg sausage bake? i'd really like something you've tried yourself but will take anything. thanks

I make individual breakfast muffins.

Preheat oven to 375

Fry up 1/4 package of bacon

Dice mushrroms, green onions, peppers. (Or any other ingredients you want to add.)

Spray muffin tin with no stick spray
Fill muffin tins 1/2 full with bisquick.

In a medium bowl, beat 6 eggs, and a little bit of milk.
Mix in bacon crumbles, and the veggies of your choice.
Blend in a little shredded cheese.

Pour over the bisquick mixture.

Bake approximately 20 minutes, or until the tops get a little crunchy, and a tooth pick inserted does not come out gooey.

Serve on platter, increase the recipe as needed for larger parties!

I have 2 recipes for you. the first has no eggs in it.

Sausage Casserole

1lb.pork sausage,fried and drained
4 (or more) medium potatoes, sliced
4oz. sharp Cheddar cheese,grated
1/4 cup flour
1/4 tsp.salt
1 1/4 cup milk

In a medium size bowl combine flour, salt and milk. Set aside. In a 9x13 dish layer sausage, potatoes and cheese, pour flour mixture over layers. Cover and bake for 50 to 60 minutes. Uncover and bake additional 10 to 15 minutes.

NOTE: Bacon or ham can also be used. You can cut down on the baking time by par-boiling the potatoes about 10 minutes.

Quiche Lorraine

bacon or thinly sliced ham
2 partically baked 8-in pie shells
1/2 to 1 cup Swiss cheese
3 eggs, slightly beaten
1 1/2 to 2 cups milk or half and half
salt and pepper to taste
nutmeg to taste
1 tbsp. butter
Fry and crumble enought bacon to cover bottoms of each pie shell; add cheese. Combine eggs, milk, salt, pepper, nutmeg and butter in bowl. Devide betwen 2 pie shells. Bake at 375 degrees for 25 to 30 minutes.

Nan's Puffs
1/2 c butter
1 cup milk
3/4 c all-purpose flour
4 eggs
1 tablespoon sugar
honey (optional)
Generously grease twelve 2 1/2 inch
muffin cups, including the edge and around the top of each cup; set aside.
In a medium saucepan, melt butter; add milk. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball that does not separate. Remove from heat; cool for 5 minutes.
Add the eggs, one at a time, beating for one minute with a wooden spoon after each addition or until smooth. Divide dough evenly among prepared muffin cups, filling cups about two-thirds full; sprinkle with sugar.
Bake in a 375 degree oven about 30 minutes or until golden brown and puffy. Remove from pan and serve immediately. Drizzle with honey, if desired.
** I have made these with great success; I recently tried making them with grated ham and cheese instead of the sugar/honey. Delicious and more subtantial, too.

Sometimes I actually prefer brunches to the traditional dinners! Here are some menu ideas:

Chille Relleno's Casserole:
1 can whole green chilies,
1 lbs jack cheese,
1 tsp salt,
1/2 tsp pepper,
1 tsp hot sauce (opt.)
8 eggs,
2 cups milk.

Layer chili's in baking dish and top with jack cheese. Blend eggs with milk, salt, pepper, and hot sauce. Pour over the top and bake for 1 hour or until golden on top and firm in a 350 degree oven. Serve with: fresh fruit, croissants with butter and jam, oven roasted potatoes.

Baked Potato Casserole:

8 Yukon Gold potatoes, partially peeled
1 container Organic Chicken Broth
1 8 oz package cream cheese
2 cups shredded sharp cheddar cheese
5 green onions, chopped
Parmesan cheese

Cook potatoes in chicken broth and drain. Mash slightly while blending with butter, cream cheese and 1 1/2 cups cheddar cheese. Stir in onion and pour into a baking dish. Top with remaining cheese and sprinkle with parmesan. Bake at 350 degrees until bubbling (about 45 minutes) Serve with bacon (canadian or platter), orange muffins, and scrambled eggs.

Salmon Fillets.

Lightly salt fillet. Place a knob of butter on a medium high heat, ribbed fry pan, and when it stops sizzling add fillet skin side down.
As it cooks you will see it changing colour and when it is about 1/3 cooked, carefully turn.
Cook until a further 1/3 is cooked and remove to a warmed plate and cover with foil.
Add some more butter and some fresh herbs:-
Fennel: for an aniseed taste.
Mint.
Parsley.
Let cook for a few minutes and remove from heat. The cast iron will keep it warm .

Serve with salad greens or wilted spinach or similar.

Try overnight french toast or baked french toast.

Epicurius has some great recipes.

Also good hash brown casserole. or go tex mex with Chicken tortilla casserole.

SPINACH CHEESE PIE – Epicurious 1980

ingredients:
1 refrigerated pie crust (half of 15-ounce package), room temperature
1 teaspoon all purpose flour
3 tablespoons butter
1 medium onion, chopped
1 10-ounce package frozen chopped spinach, thawed, squeezed dry
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
1 15-ounce container ricotta cheese
8 ounce mozzarella cheese, grated
1 cup grated Parmesan cheese
3 large eggs, beaten to blend

preparation:
Preheat oven to 350°F. Unfold pie crust. Press out fold lines; if crust cracks, wet fingers and push edges together to seal. Sprinkle flour over crust. Place crust floured side down in 9-inch-diameter glass or ceramic pie dish. Fold edge under and crimp decoratively.

Melt butter in heavy large skillet over medium heat. Add onion and sauté until tender, about 8 minutes. Mix in spinach, salt, pepper and nutmeg. Sauté until all liquid from spinach evaporates, about 3 minutes.

Combine ricotta, mozzarella and Parmesan cheeses in large bowl. Mix in eggs. Add spinach mixture; blend well.

Spoon cheese mixture into pie crust.

Bake until filling is set in center and brown on top, about 40 minutes. Let stand 10 minutes. Cut pie into wedges.

Although I made my own pie crust, I recently baked the spinach pie above according to instructions and it was delicious. In fact, I have two kinds of cheeses in the fridge and today I bought spinach & an onion from the produce market. Planning to make it soon as soon as I collect all ingredients..
