Cheese here in the USA is not quite as good as it is in other countries I have heard since here they pasterize everything. Cheese to some is something that is topped on a pizza or a taco, but to many of us cheese can be quite delectable as in brie or other gourmet cheeses that are paired with wine and or fine breads. Haven't met a cheese fromage formaggio I didn't like.

Queso here in Mexico. It goes in everything. The quesadilla is a popular snack, a tortilla with melted cheese. In the bigger cities local cheeses compete with French, US, Italian and Danish brands.

In the USA, cheese is cheese unless identying by the type - "Swiss", "Jack", "Cheddar"... etc.

Cheese is uses as a flavoring agent and a binder, such as, Mac and Cheese.
