Ina Garten says "never break an egg directly into a batter, because you never know when you're going to get a bad one." I don't think I've ever actually gotten a bad egg in a package of eggs from the store. Other than something that is obviously rotten, what does one look for to identify a bad egg?

Just by the smell... so you have to break it... unless it was obvious the shell was cracked in the package.

The spinning and putting the egg in the water won't tell you have have a bad egg. It just means the egg has a larger air sac which is more of an indication of age, but not "badness".

In all my years of cooking and using supermarket eggs, I've never come across a rotten egg.

As far as freshness goes, an old egg will float in cold water whereas a fresh egg will sink to the bottom. Other than that, if you are using a recipe that is very sensitive to ratios, you may want to hold it up to the light, just in case it has a double yolk. I have never had anything thrown off by a double yolk though.

I'm not sure if you can tell if an egg is bloody by holding it up to the light or not, I've never had a bloody one. But that's one sure way to ruin a recipe!

fill the sink with water. put the eggs in the water, if they float they are bad. (do this when you come home with the eggs, I have gotten an entire dozen that was bad, the store replaced)

NO FEAR!!!
I raised free range chickens for a while
Did you know that a chicken will eat a dead gopher or mole even a dead baby chick,,,,, any dead thing,, including BUGS that may have been poisoned.....
I bought MY eggs from the store.
I gave my home grown eggs to the food bank as a tax deduction as long as that lasted
Then I got rid of the chickens "Give away".

Easy, you spin each egg in turn on a plate. The egg that keeps spinning for longer is the cooked one. Now spin the eggs again but quickly stop them spinning. then immediately let them both go again.

Put them in a custard cup before gradually put them into meal.

I raise chickens and sometimes you will get blood and what looks like trash in the eggs. I always break them into a saucer first.

Fill a glass full of water. Place egg in glass. If it sinks it is good. If it floats it is rotten !!!! It really works !!! *smile*
