I don't fry foods too much, but when I do, the greese overflows and goes everywhere. It happens right after I put in the chicken. It does not happen all the time, but it happens often enough to make a big mess. So, does anyone know what causes this and what I can do to prevent it??

Two reasons...
1. Displacement... when you put the chicken in the oil the oil level will rise.

2. Moisture... when oil is frying especially when you just put food in. The moist chicken hits the hot oil and produces a lot of steam. The steam causes the oil level to rise too.

You need a pot that's high enough so you have 3" of space from the oil to the top of the pot. This will allow room for the oil to rise when you put the chicken in the hot oil and allow room for the steam to vent without spilling over.

Also, make sure the chicken is as relatively dry and put the chicken in slowly.
