Red meat turns brown when its exposed to oxygen, so that's not a determinate factor.
Ruined meat smells like a dead mouse, if you've ever smelled that you will know at once that its bad, but refrigerated meat won't smell that bad, it will just have a slight 'off' odor. If the meat is shiny or has multiple colors, toss it. If its is slick toss it.
The meat we buy in supermarkets is usually good until a day or two after the sell by date. Some places have a pull by date, and then there is no grace period.

if it smells it's ruined... you'll know by the smell it's very pungent.
If your steak still smells like steak, then it's still good. The color is not really an indicator since it has to do with the myoglobin not holding onto the oxygen and probably some drying.

Dee, It has to do with oxygen and a scientific word called "myoglobin". When steaks are first cut they are a deep red, or purple color, and after a few minutes of exposure to oxygen they turn a nice bright red. This is called "blooming". Over a period of a few days, the myoglobin protein loses it's ability to hold the oxygen and the meat will turn brown. The same process will turn the inside of hamburger brown, also. On occasion, the myoglobin protein and exposure to the light will cause steaks to have a "bluish/green" tinge when held to the light at a certain angle. Yes, the steaks are fine to eat. Also, the steaks are NOT aging, but just getting old.

When in doubt, throw it out! Having suffered through a few days of food poisoning for what I believe was caused by spoiled bacon, I don't take any chances. Also, if it's really brown, it could be bad. Unfortunately, all raw meat smells bad to me. I can't normally tell if something is spoiled until after cooking it. If you cook it and it just tastes a little "off" or leaves a weird aftertaste, it's probably bad.

The meat is probably fine if it does not smell bad. They age steak. Meat turns browner when the hemoglobin in it does not get oxygen. It is not spoiled. Meat should have a refrigerator shelf life of 3 days after the sell by date.

Smell is the only way. I would toss it if it's greying or if you are too unsure. If you are feelig iffy about it you won't enjoy the meal anyhow. Sometimes meat turns brownish but is still okay, it just means that it's a bit old.

It is not ruined. You can still use it but I wouldn't make burgers out of it. Make a pasta sauce or sloppy joe sauce and you will be fine. Noone will taste it.

Butchers add color and special bleach to meat as well as their common vacuum immersion to add more water to the meat,... Even when grinding hamburger they add water.

It should be fine. If it is bad, you'll know! It will reek and be greeezy to the touch. A little brown isn't bad especially if it was red yesterday.
