Popeye's Fried Chicken:
A copycat recipe of Popeye's Famous Fried Chicken!

1-2 servings
1 frying chicken, with skin cut up
6 cups vegetable oil
2 tablespoons white pepper
1 teaspoon cayenne pepper
2/3 cup all-purpose flour
2 teaspoons paprika
1 tablespoon salt
3 eggs
1. Heat the oil over medium heat in a deep fryer or in a wide, deep pan on stove.
2. In a large bowl, combine flour, salt, peppers, and paprika.
3. Break the eggs into a separate bowl and beat until blended.
4. Check the oil by dropping in a pinch of the flour mixture, If the oil bubbles rapidly around the flour, it's ready.
5. Dip each piece of chicken into the egg, then coat generously with the flour mixture.
6. Once the chicken is coated, it should be placed on a rack to allow the pieces to dry, which may take 20 to 30 minutes. Allowing the pieces to dry will provide for more even browning of the chicken.
7. To fry, heat oil in a heavy skillet over a medium-high burner until the oil is very hot. Place the chicken pieces in the hot oil, skin side down, one piece at a time. Leave enough space between pieces so that they are not crowded. This allows the pieces to cook and brown more evenly.
8. Continue to cook over a medium heat, turning until all sides are golden brown and the meat is cooked thoroughly.
9. As the pieces finish cooking, they should be removed from the pan and placed on a paper towel to allow grease to drain.

It's not popeyes but it one of my simplest and tastiest.
Put a little salt and pepper on the raw chicken.
Dredge in flour and shake off excess.
Dip into egg wash.
Then coat entirely with a breadcrumb, parsley, and grated parmesean cheese mixture.
Pan or deepfry and enjoy.
There really is no specific recipe for this because it's that simple. just make sure you coat the chicken thoroughly by putting the eggwashed chicken in the midle of the breadcrumb mixture, burying it and pressing down on it firmly. That will give you an even coat.

Cheater Pot Pie
INGREDIENTS
3 tablespoons butter, melted
1 (16 ounce) package frozen mixed vegetables
1 (5 ounce) can chicken chunks, drained
2 (10.75 ounce) cans condensed cream of chicken soup
1/2 cup milk
salt and pepper to taste
1 (10 ounce) can refrigerated layered biscuits
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Lightly butter a 9 inch deep dish pie pan with melted butter; reserve some of the melted butter.
In a saucepan over medium heat, combine mixed vegetables and chicken; cook until vegetables are tender. Fold in soup; mix well. Pour in milk and mix until smooth; mixture should not be runny. Add salt and pepper to taste. Bring to a boil.
Remove from heat and spread mixture into bottom of pie pan. Separate biscuits into layers and place gently on top of mixture. Drizzle remaining butter on top of biscuit layers.
Bake in preheated oven for 15 minutes, or until golden brown. Let stand for 15 minutes before serving.

4 sheets frozen puff pastry
1 egg, beaten
4 chicken breast halves, or 2 cups leftover cooked chicken
Seasoned salt and pepper
2 tablespoons cooking oil
1/3 cup butter
2/3 cup all-purpose flour
1 quart heavy cream
1/4 cup chicken base
1 tablespoon minced garlic
1/2 small yellow onion, minced
1 cup frozen green peas, cooked
1 cup chopped cooked carrots
Pinch fresh grated nutmeg, optional
Crust:
Preheat oven to 350 degrees F.
Cut each sheet of frozen puff pastry into 1-inch strips, 8 inches long. On a large cookie sheet, weave strips into a lattice large enough to cover each pot pie. Brush beaten egg onto each lattice square. Bake for 5 minutes, or until dough has risen and turned light golden brown. Set aside until ready to assemble pies. Leave oven on at 350 degrees F.
Filling:
Season chicken with seasoned salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. Alternatively, you may use precooked chicken.
In a large saucepan, melt butter and then slowly add flour, stirring until consistency of peanut butter, but not brown like a roux. Slowly add cream and keep stirring. Add chicken base, garlic, and onion and stir until thickened. Add peas, carrots, nutmeg, if using, and cut up chicken. Remove from heat. Fill 4 individual oven-proof bowls with chicken mixture and then top each with a pre-cooked lattice square. Bake for 5 minutes or until bubbly. Any remaining pie filling may be frozen.

Haven't tried any of the recipes below but I got a chuckle at the thought of lots of spinach, some Olive Oyl and perhaps some cayenne pepper or chilli to make those eyes pop out!
