8 ears corn
1 pound bacon

Gently pull back the husk exposing the corn. Do not remove the husk. Remove the corn silk and use a brush to make sure all the silk is removed. Soak the corn with the silks removed in water for 30 minutes. This will prevent the husks from charring. Preheat a grill to medium heat.

Remove from the water and pat dry. Take a strip of bacon and wrap it around the corn. Fold the corn leaves back over, covering the bacon and corn. Tie the leaves with butcher string and repeat the process for each ear of corn. Place the ears of corn on the hot grill and cook, turning occasionally until bacon is cooked and corn is tender, approximately 15 to 20 minutes.

When corn is in season and at its sweetest, I cook it as little as possible. The longer you cook it, the sugars converts to starch.

In boiling water, 5 minutes at the most.

On the grill, pull back the husk (don't tear off the stalk), remove the silk, pull the husk back up and wet the leaves. Throw onto a hot grill for about 5 to 10 minutes to heat and steam the kernels.

I've never tried bacon wrapped corn so I have no advice there, except that you're going to be cooking the corn longer due to the bacon. I think the natural sweetness of the corn would diminish.

BACON CORN HUSKS

10 ears fresh corn with husks
1 tsp. salt
1/4 c. butter, melted
20 slices lean bacon

Remove outer husk. Carefully fold down remaining leaves. Remove silk. Combine butter and salt. Brush ears with mixture. Wrap each ear diagonally with 2 pieces of bacon and secure with toothpicks. Fold husks up over corn. Wrap individually in foil. Grill 6 inches from coals for 15 to 20 minutes. Pierce with fork to check for doneness.
