shouldnt there be a really rich collection of books encoraging study of scriptural truths ?

I mean you are talking about several sized bookstores and a rich history of the bible going into English

Because Westminster Abbey is more symbolic than religious. York Minister has loads.

no demand, if you are shopping for a book on the bible, you go to a christian book store. they have LOTS of books on the bible there.

It is very touristy destination and people buy things they are unlikely to find at home.
