The saying is "Don't count your chickens before they hatch."

What it means is don't put too much trust in predictions about the future, because you can't know for sure what happens until it DOES happen.

Don't count your chickens before the eggs are hatched = don't make plans based on something you don't have yet. Sometimes what you plan on happening doesn't, just as some eggs may break or spoil without hatching a chicken.
