I am an italian chef from NY, so here's my "grandma's Sunday sauce" (REAL sauce is made with a meat base):
get about 4 -5 large country style pork ribs (with the bone!)
and/or a package of sweet italian sausage
brown all meat in a large sauce pot with oil (not olive -it burns) season the meat as it is browning with some black pepper and garlic salt
After meat is just brown (not cooked) add 3 or 4 LARGE cans of Hunt's tomato sauce and crushed tomatoes (2 cans of each)
Add a tsp. dried oregano, half of a white onion (not chopped -in one piece)
About 1 tsp. salt and turn burner dowm to low, put lid on, tipped. Let simmer for approx. 4 -5 hours.
TRUST ME you will not be disappointed. Sauce needs to have meat and has to cook a long time for meat to "tighten up" and then loosen up -that's what makes it tender. The pork and bones is what gives sauce it's flavor. No Garlic. You also could add one bay leaf.

This is a genuine Italian spaghetti dish that I always make, it's amazing and fairly easy to do - it's one of those quick pasta dishes that can be thrown together in mere minutes, yet is so tasty!
Adjust the amount of chilies to your own taste. The amount indicated in the recipe is just a suggestion. Generally, you don't offer cheese to top any pasta with hot spices in it, as the cheese would diffuse the heat of the sauce.
Ingredients are:
1 Pound Spaghetti
1/2 Cup Extra Virgin Olive Oil
5 Large Cloves Of Garlic, Minced
3 Dry Hot Red Chili Peppers, Crushed
1/4 Cup Finely Chopped Fresh Parsley
Cook the pasta in salted boiling water. While it is cooking, heat the oil in a small, heavy saucepan. Add the garlic and chili peppers and cook until sizzling but not browned. Remove from the heat. Once the pasta is cooked al dente, remove a small cup of pasta water, and drain the pasta. Return to the pot, and add the garlic, chili oil. Mix well over medium heat until hot, adding a little pasta water if the mixture seems dry. Add the parsley, mix well and serve.
Buon Appetito! :-)

So I'm guessing you want the 'sauce' recipe, so here goes:
Italian Spaghetti Sauce
1 cup minced onion
2 Tablespoon olive oil
1 lb ground beef
2 minced cloves garlic
1 med green pepper diced
1 can 29 oz stewed tomatoes
1 can 6 oz tomato paste
1-1/2 cups water
1 Tablespoon Salt
1/8 teaspoon pepper
1 teaspoon rubbed sage
2 bay leaves (whole)
1 teaspoon oregano
1/4 teaspoon thyme
Saute onion, add ground beef and cook till red disappears. Place all ingredients in a pot and simmer for 1-1/2 hours, stirring occasionally.
Serve over hot spaghetti noodles, and garnish with Parmesan cheese. Be sure the have HOT garlic bread on the side with a green salad.
This recipe has been in my family for over 60 years! Enjoy ..><>..

It's the seasonings that create the aroma. I cheat. I use the style of Prego sauce I like (they have lots of choices). I cook my ground beef and add 1/2 pound of bulk sausage per pound of beef and a medium onion (chopped). When the meat is browned, I drain the grease (some prefer to leave it in) and transfer to a pot. Add the sauce and about 2 tablespoons of dried Oregano. Add two cloves of fresh garlic (chopped fine). Bring to a boil and then reduce to simmer and cover. let it cook for a couple hours. Stirring every 15 minutes will release the aroma into the room and avoid it burning on the bottom.

Heres how you accomplish that. Go buy a big jar of sauce. The secret to the smell is in the seasonings you use. If you are going to use ground beef for your meat, while browning it, add lots of galric, basil, oregeno, and onion. Cook your meat slowly and the smell will be great. Plus you get to cheat with the sauce still. Also make a good loaf f garlic bread with the same spices on it, while its baking, it will fill the house with wonderful smells too! Good luck!

Try adding parmesan cheese, olive oil and some extra italian seasoning to your spaghetti sauce then turn down the heat and let simmer. Just be sure to season to your own taste, if the smell isn't to your satisfaction. Make some garlic bread or some of those prepacked ready to bake breadsticks sprinkled with olive oil, parmesan cheese and garlic or basil.

With there being so many premade sauces now available I stopped making them myself years ago.
I will however tweak one up if I think it necessary and do get some really great smells.
I wish I could email you last night's smell it was great. The food didn't taste too bad either.
Good Luck.
