Carthusians are vegetarians as well as Benedictines, Cistercians, Trappists, Carmelites and Fransicans. There are many Catholics who have been outspokenly vegetarian such as St. Francis of Assisi, and Thomas Merton.

Each order has it's own rules. I am sure there is a veggie monastery somewhere. Abstaining from meat is meritorous. (official doctrine) Why would you want 2 be a nun when you could be Pope someday girl! And then you could be a vegetarian and show the world instead of hiding yourself.
There is no higher calling for a woman than to be a wife and mother. If you really want to change the world, you have to rock the cradle.

Many monasteries only allow meat for those who are ill. Research a bit about the Trappists.
