I love garlic chicken and cream cheese mashed potatoes! Just thinking of this is making me hungry! Just add cream cheese to the potatoes before (or instead of) butter with just a bit of milk. Use as much as you will allow yourself! LOL, I've never made it with "too much." Once it's blended well, you can add milk for the desired consistancy. Season with salt and white pepper, instead of black, although either will do.

Then, use your favorite green bean almondine recipe with fresh green beans.

If you want a lower fat alternative, make wassabi mashed potatoes. I always make these with garlic chicken and all three choices go well with it and no gravy is required.

Can I come over for dinner? :-)

But you can put any kind of soup in the bread bowl. Desserts: - Chocolate Ricotta Mousse - Apricot Coffee Cake - Pumpkin-Bourbon Pudding - Citrus Angel Cake - Cinnamon-Spice Chocolate Brownies - Peanut Butter Macaroons Everything I wrote down is super healthy and looks amazing when cooked. A lot of them sound like there really complicated and hard to make, but there not. Sorry I didn't type the recipes, it would've been way too long. Arroz Con Habichuelas (Puerto Rican Rice w/ Beans)
4 cups water
8 ounces smoked ham hock
1 cup dried pinto beans
1 cup uncooked long grain white rice
1 teaspoon olive oil
1 dash sesame oil
1/2 onion -- peeled and diced
2 cloves garlic -- smash and chop
1 large red bell pepper -- seeded and diced
2 jalapeno peppers -- seeded and diced
1 tablespoon fresh chopped oregano
1 15 ounce ca peeled plum tomatoes -- drain reserve juice
1/2 teaspoon salt
1/2 teaspoon ground peppercorns
3 tablespoons fresh chopped cilantro
2 tablespoons capers
Place the water and ham hock in a pressure cooker, check to make sure the steam release holes are clear and cook for 5 minutes. Add the pinto beans and cook 20 minutes more. Add the rice, and when the pressure cooker "hisses," cook for another 5 minutes.

While the rice and beans cook, heat the oil in a large skillet and saute the onion and garlic until the onion becomes translucent. Add the red pepper, jalapeno peppers, oregano and tomatoes, stirring and chopping as you go. Add 1/4 c of the reserved tomato juice, half of the salt and half of the pepper. Lower the heat and simmer 15 minutes.

After the rice and beans have cooked, remove the ham hock, slice off 2 ounces of lean meat and reserve. Add the cooked rice and beans to the pepper-tomato mixture in the skillet. Stir in the reserved ham hock meat, 2 tablespoons of the cilantro, the capers and the remaining salt and pepper.

To serve: Spoon into bowls and garnish with the remaining cilantro. My personal notes:

The recipe is very flexible in the type of chiles used. I usually blend a couple of types for complexity. The dish is also great for splashing on your favorite hot sauce too. I also usually add beer instead of water when things are looking a bit too dry. It also can be fun to mix in a few different types of beans, like black beans and pintos. It isn't a requirement to use a pressure cooker, but it is fast and the flavor from the ham hock to the beans is greater.

Cheesy Potatoes with Butter-Crunch Topping

2 lb bag frozen hash browns
2 sticks butter (melted)
1 can Cream of Chicken Soup
1 cup Milk
2 cups Shredded Cheddar Cheese
2 cups Regular Corn Flakes
½ cup Chopped Onion (Optional)

Preheat Oven to 350º F.
Pour Potatoes in 9” x 13” casserole dish. Pour 1 stick of Butter over Potatoes.
Mix Cream of Chicken Soup and Milk (add Onions if desired). Pour over Potatoes.
Sprinkle Cheddar Cheese evenly over Potatoes.
Bake uncovered for 45 minutes to 1 hour.
Remove Casserole from oven and sprinkle Corn Flakes over Potatoes and Cheese evenly. Drizzle 1 stick melted Butter over Corn Flakes.
Turn oven up to 400º F and bake 15 minutes more.
* I half this recipe and use as a side dish with dinner (4 people).


BAKED CHILI CORN COBS

1/4 c. soft butter
1/4 tsp. salt
1/2 tsp. chili powder
4 ears corn

Heat oven to 350º.
Mix butter, salt and chili powder; spread generously on each ear frozen corn.
Wrap each ear in heavy-duty aluminum foil. Place on ungreased baking sheet.
Bake until tender, about 1 hour. 4 servings.

If you really like garlic, I would serve garlic mashed potatoes with the chicken. Place a clove or two of peeled garlic in a small amount of olive oil in a small oven safe custard cup and allow it to roast in the oven. Once done, use a fork to mash thoroughly.
Make the mashed potatoes as usual and as you mash the potatoes mix in the oil in place of butter along with the roasted garlic.

Rice Florentine

3/4 C. regular white rice
1 can low sodium chicken broth
handful of spinach leaves sliced into strips
1/4 C grated Parmesan cheese

Mix the rice, broth, and spinach, cook as usual for rice. Add the Parmesan just before serving.

Just put it together with your favorite mashed potato receipe.(I like red skin mashed with sour cream butter & milk) And I like to eat it with green beans too. Depending how much you like garlic, make garlic green beans...whole green beans lightly steamed then a min. or 2 in a pan with a little olive oil, garlic that has been pushed thru a press, salt & pepper. What's more homey then chicken, mashed potatoes & green beans! Yum!

16 oz bag of frozen green beans
about half a stick a butter
garlic powder and parmesan cheese

I melt butter in small sauce than add green beans
add garlic powder and parmesan to taste

Rice Pilaf or maybe a wild rice can buy both in a box tastes great. Then some green veggies to dress it out.
