Countable for what? It is a noun. It counts.
I think people can say "You got some e-mail from..." (to mean that person received two or more) OR "You got an e-mail from..." (meaning that person received one e-mail).

It can be either. Either of your examples can be used.
"I have to check my e-mail": non-countable, I assume I have more than one--I'd say "I have to check my messages" because "message" is always countable.
"Thanks for your e-mails": countable, referring to a number of specific e-mails.

I think that yes, it is countable, since you can say "I have 3 e-mails."
This means you would say "an e-mail".
It also means that you would have "fewer e-mails" rather than "less e-mail".

But "mail" (usually without the "e-") is often used collectively as in "You have mail"
