If you believe in evolution (the big bang, maybe) then it is very easy to say we are made of star dust because everything would be made from the same basic ingredients.

The universe started out with just hydrogen and helium, the lightest two elements. Something had to produce all the other, heavier elements that are present in our bodies (those which astronomers call 'metals'), and the only thing we know of that can do that is nuclear fusion in stars. Those heavier elements can be spread through space when a star explodes in a supernova. Therefore, it seems pretty certain that we are indeed made of the remnants of dead stars.

"Dust" is a term you are using very loosely here but yes, I believe we are made out of atoms that were once fused together in a star.

Not exactly.
I think you're taking it in the wrong context - what they generally mean is that all matter at one point had come from stars. I don't think they literally mean we're made from stardust.
