Just happened to buy some on sale from amazon.com yesterday and someone on there suggested using half as much agave nectar as the recipe calls for sugar.

Just substitute the sugar in any carrot cake recipe with Splenda. It works beautifully. You can't really substitute a granular sweetener with a liquid one. Carrot cakes take time and effort to make, so do it right... If it tastes terrible, it would just be a waste of your time & money. .... How did you expect to do the cream cheese frosting non-fat? That's one of the best things about carrot cake!
