Do you usually do this when you arrive? Or just before you leave?

I usually take them out for breakfast or dinner during my stay. And leave a gift at my departure if appropriate

If you are from out of town and bring something from your home area, then you would give it when you arrive. If you are just going to get them a general gift that can be purchased anywhere, then I would get something while visiting and give it when I left.

Giving a gift once you know what someones house looks like, the decor, colors, etc. is always nice. However a gift indigenous to your hometown is great too.

If you have been to the house before, maybe you have seen something they could use. Give it to them when you arrive, if you have that gift. After you leave, write them a thank you note for their hospitality.

If you have never been there, give them a bottle of wine or flowers or their favorite bottle of liquor or box of candy. Look around and make a note of what to bring them next time, too.

If you will be staying for a few days, observe your surroundings and choose something appropriate to give them on the day you leave. (towels, kitchen utensils, wine glasses, knick knack, gift certificate to a local store, etc.)

Always write a thank you note (not an email) a couple days after you've left.

I would say anytime. Usually people bring a gift with them, but I moved into a house this past year and people have brought gifts when they have visited, but everyone of them have said, I didn't know what to get so...here is a plant, a garden ornament, etc. I think it would have been nicer, if they were going to spend the money anyway, to have seen my home and then bought me something that went with it. Just my opinion.

It depends on how long you're staying. Etiquette in many cultures requires that one never fail to offer even the smallest token to a host. If you're invited to his home, bring a small bunch of flowers, bottle of wine or high end non-alcoholic beverage, etc.
If you stay overnight, it's reasonable to send a thank you note within a week or two. Longer? A box of some sweet, chocolate, peppermints, etc. left on the dresser or bed of the room you occupied along with a quick note of thanks is considered appropriate.

It's best to give it to them once you arrive. Get it over with and they will know you did bring them a gift.

I think you should give a gift when you're ready to leave....unless it's something that you could all enjoy while you're there.
