That's a difficult project you are taking on! However, there are some choices. A few of the ones listed below have possibilities--
Xigua is the Chinese name for watermelon.

Make a Deluxe Pizza. ( X is in Middle of the word)
Xanthareel is a yellow eel used in medicinal foods.
Xylocarp is a hard and woody fruit. A coconut is an example of this.
•Xanthan Gum - Produced from the fermentation of corn sugar. It is most commonly used as a stabilizer, emulsifier and thickener in foods such as yogurt, sour cream and salad dressings.

xantham gum was the first thing that came to my mind also, but I doubt that a preschooler would understand it.
ximenia fruit and xigua are two others, again I do not think too many preschoolers (if any, lol) would know what they are.
I know I have seen a lesson plan using alphabet food books done many, many times, and the letter x is usually left blank and the kids are encouraged to make up their own letter x food, give it a name, draw a picture of it, and decide how it would taste.

like both, fruits: berries, oranges, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... We guess the two are great.

At my preschool we did food for every letter! For X my firend broght in jello in a X shape and goldfish. X marks the treasure!
