Usually COE means Cab over engine. A style of pickup that was found more in the 1960s than the 50s

COE does mean cab over engine as the others have stated, however I do believe the ones you are referring to are from the 40's and early 50's, Chev, Ford, Dodge and even International all made them

coe means Cab Over Engine. So there is no hood to speak of.
