Is there software that makes it so I can record exactly what is being viewed on my screen?
So that I can just start the program and it is recording.
I want to make a video tutorial on Youtube

Yes :)

You have several options here. They are generally small programs, so you can try a few out without much hassle. Just google screen capturing programs or something like that. I personally like this one: http://www.camstudio.org/ This program converts whatever you "record" into a .avi which is nice. There are some that will make them into .gif's as well, so depending on what you want, there is probably something to suit your needs.

I'm not too sure mate but in my gaming days, some of my clan members made a video with Div X. They recorded in game footage with it. I don't know if it works for normal computing but it's worth looking at.
